INSTRUCTIONS

  1. Heat oil in a large skillet over medium high heat until the hot oil sizzles, about 1 minute. Add ground beef (or ground pork) and cook until browned on all sides, about 5-7 minutes. Make sure to break up the meat into small pieces to help even browning.
  2. Add ginger, garlic, Sichuan peppercorns, crushed red pepper, and white pepper (if using). Stir well and cook until fragrant, about 1 minute.
  3. Add Shaoxing wine, chili bean paste, chicken broth (or water), and cornstarch. Mix well until smooth and let the sauce mixture simmer over medium heat for 3-4 minutes until thickened a bit.
  4. Carefully add tofu and toss gently to coat. Optionally, you can gently heat the cubed tofu in a large cooking pot of boiling water over medium heat for 1-2 minutes to firm up a bit, and then transfer into the sauce mixture.
  5. Stir in sesame oil (or chili oil) and green onions and let the tofu simmer in the sauce for 1 minute.
  6. Serve immediately with a bowl of steamed rice or fried rice.

CHICKEN MARINADE:

  • 1 chicken breast (about 1/2 lb.), boneless and skinless, cut into 1/2-inch cubes
  • 1 tablespoon soy sauce
  • 1/2 tablespoon Chinese Shaoxing cooking wine (or mirin)
  • 1 teaspoon cornstarch (or all purpose flour)
  • 1 tablespoon olive oil

KUNG PAO SAUCE:

  • 1 tablespoon soy sauce
  • 1 tablespoon black vinegar
  • 1 tablespoon Chinese Shaoxing cooking wine (or mirin)
  • 1 tablespoon granulated sugar
  • 1 teaspoon chicken bouillon powder (or 2 tablespoons chicken broth)
  • 1 teaspoon white pepper (optional)
  • 1 teaspoon cornstarch (or all purpose flour)
  • 2 tablespoons water

STIR FRY:

  • 1 tablespoon olive oil
  • 4 dried red chili peppers, cut into 1-inch pieces
  • 1 tablespoon garlic, thinly sliced
  • 1 tablespoon ginger, thinly sliced
  • 1/2 red bell pepper, seeded and cut into 1/2-inch cubes
  • 1/2 green bell pepper, seeded and cut into 1/2-inch cubes
  • 2 green onions, cut into 2-inch pieces
  • 1/3 cup roasted peanuts

INSTRUCTIONS

  1. In a medium mixing bowl, stir to combine chicken, soy sauce, cooking wine, cornstarch, and olive oil. Cover and set the chicken aside, allowing it to marinate for at least 10 minutes.
  2. In another mixing bowl, whisk together all the Kung Pao sauce ingredients (soy sauce, vinegar, cooking wine, sugar, chicken bouillon powder, white pepper, cornstarch, and water). Whisk until the sugar and cornstarch is fully combined.
  3. Heat oil in a large skillet or wok over medium-high heat for 2 minutes until the hot oil is sizzling hot. Add in the marinated chicken and stir fry for 3 minutes until browned on all sides.
  4. Add dried chili peppers, garlic and ginger. Stir well to mix until fragrant, about 1 minute. Add red and green bell peppers and green onions. Stir fry for another minute until soft.
  5. Stir in the sauce and toss well to coat until the sauce thickens to desired consistency, and the chicken and vegetables evenly coated with Kung Pao sauce.
  6. Stir in peanuts and serve immediately with steamed rice or fried rice.

INSTRUCTIONS

  1. Heat oil in a large skillet over medium-high heat. Add ginger and garlic and cook for 30 seconds until fragrant. Add tiger prawns and stir to coat with oil. Continue to cook for 1-2 minutes, stirring constantly to ensure even cooking on all sides.
  2. Stir in cooking wine and continue to stir for 15 seconds. Stir in soy sauce and reduce heat to medium. Cook for 1 minute, stirring occasionally.
  3. Stir in sugar, pepper (optional) and water. Turn heat to high, cover and cook for 2 minutes.
  4. Turn heat down to low, give the prawns a final stir, ensuring that the sauce is coating prawns completely. Remove from heat. (Note: prawns will be done once they are evenly coloured and have shrunk in size but are no longer getting smaller).
  5. Serve with some cilantro on top.

Black Cod:

  • 1 lb. (400 g) piece of black cod, cut into 2 steaks (1/2-inch thick)

  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

Black Bean Sauce:

  • 1/2 tablespoon fermented black beans
  • 1 tablespoon water
  • 1 teaspoon maggi sauce (flavored soy sauce)

INSTRUCTIONS

  1. In a large ziploc bag, add garlic, soy sauce, sugar, salt and pepper. Shake well to combine. Add cod steaks to the ziploc bag, press the air out of the bag and seal tightly. Press the marinade around the cod to coat it. Place bag in the fridge and marinate for least 30 minutes, up to overnight.
  2. Remove the marinated cod out of the bag and place them on the air frying basket, spaced evenly. Cook at 350 F for 17 minutes.
  3. In the mean time, prepare the black bean sauce. In a small bowl, add fermented black beans, water, maggi sauce, and sesame oil. Stir to mix evenly
  4. Remove cod from the air fryer and place in a dish. Garnish with cilantro and jalapeños (optional). Pour the black bean sauce over top of the fish and serve.

FOR THE MEATBALLS:

  • 1 lb. ground pork
  • 1/2 cup breadcrumbs
  • 2 large eggs
  • 2 tablespoons Shaoxing cooking wine (or mirin)
  • 1/4 cup green onions, finely chopped
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/2 tablespoon brown sugar
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper (or white pepper)

FOR THE SWEET SOY SAUCE:

  • 1/4 cup soy sauce
  • 1/4 cup chicken broth
  • 2 tablespoons brown sugar
  • 1 teaspoon sesame oil
  • 1/2 tablespoon flour (or cornstarch)

INSTRUCTIONS

MAKE THE MEATBALLS:

  1. In a large mixing bowl, combine pork with breadcrumbs, eggs, Shaoxing cooking wine, green onions, soy sauce, sesame oil, brown sugar, ginger, garlic, salt and pepper. Mix well until uniform in consistency.
  2. Divide pork mixture into 5 equal pieces and roll into meatballs with your hands. Wear disposable gloves when handing meat to avoid contamination.
  3. Cook the meatballs in the air fryer or oven.
    • In the air fryer: Place meatballs in a single layer in the air fryer and cook at 375F for 20 minutes, until the internal temperature reaches 160F when measured on a meat thermometer. Set aside.
    • In the oven: Place meatballs in a parchment-lined quarter sheet baking pan and cook in a 375 preheated oven for 40 minutes, until the internal temperature reaches 160F when measured on a meat thermometer. Set aside.

MAKE THE SWEET SOY SAUCE:

  1. In a small mixing bowl, add soy sauce, chicken broth, brown sugar, sesame oil and flour. Whisk well to combine until flour and sugar dissolves.
  2. Transfer the sauce into a shallow saucepan and heat over medium for 3-4 minutes. Continuously stir until desired consistency is reached.
  3. Add meatballs to the saucepan and toss well to coat evenly. Garnish with green onions and serve warm with a bowl of steamed rice, and drizzle any extra sauce from the pan on top.
