INGREDIENTS

  • 2 large ripe avocados, peeled and pitted
  • 3 tablespoons red onion, finely diced
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 tablespoon lime juice (about juice of 1 lime)
  • 1/2 teaspoon sea salt
  • 1 jalapeño pepper, seeds removed and finely diced (optional)


INSTRUCTIONS

  1. Place avocado into a medium mixing bowl and mash with a fork. Don’t over mash because you want the guacamole to be a little chunky.
  2. Add red onion, cilantro, lime juice, salt, and jalapeño (if using). Stir to combine. Give it a taste and add more salt or lime juice if needed.
  3. Serve with tortilla chips or on the side of some tacos or quesadillas.

Shrimp Taco Salad Recipe – Shrimp Taco Salad – How To Make Shrimp Taco Salad

INGREDIENTS

FOR THE SHRIMP:

  • 1 lb. white shrimp, peeled, deveined, and tails removed
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder (optional for a kick)
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano (or Italian seasoning)
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

FOR THE SALAD:

  • 1 head romaine lettuce, chopped (about 6-7 cups)
  • 1 cup grape tomatoes, halved
  • 1/2 cup purple cabbage, diced
  • 1 medium ripe avocado, sliced
  • 1 cup corn kernels (canned or cooked from frozen)
  • 1 cup tortilla chips, crushed
  • 1/2 cup creamy cilantro lime dressing
  • lime wedges (optional, for garnish)

INSTRUCTIONS

  1. In a medium bowl, add shrimp, olive oil, cumin, chili powder, paprika, garlic powder, oregano, salt and pepper. Toss well to coat and set aside to marinate for 15 minutes (if you have the time).
  2. Cook the shrimp in the oven, air fryer, or over the stove.
    • To cook in the oven: Spread the shrimp evenly on a parchment lined quarter sheet baking pan and bake in a 400 F preheated oven for 8-10 minutes until the shrimp turns pink.
    • To cook in the air fryer: Cook the shrimp in the air fryer at 350 F for 8-10 minutes, shaking the basket once halfway through.
    • To cook on the stovetop: Sauté over medium-high heat for 5 minutes until shrimp turns pink and nicely browned.
  3. In a large serving bowl, add all salad ingredients including lettuce, tomatoes, purple cabbage, avocado, corn, tortilla chips, and cooked shrimp.
  4. Drizzle cilantro lime dressing on top and toss to combine.

  • 1.5 lbs ground beef
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 zucchini, chopped
  • 8 oz mushrooms, chopped

  • 2 large tomatoes, chopped

  • 2 cups shredded cheddar cheese

Instructions

  1. Heat oil in a skillet over medium high heat. Add onions, bell peppers, zucchini and mushrooms and sauté 3-4 minutes.
  2. Add in garlic, jalapeño, ground beef and salt and combine well, breaking the meat as you go along. Cook until the beef is no longer pink.
  3. Add tomatoes and taco seasoning ingredients. Stir well and cook 2 minutes.
  4. Mix in tomato paste and cook 8-10 minutes.
  5. Spread cheese on top of mixture. Cover and cook until cheese is melted.

Ingredients

For Homemade Fajita Seasoning

  • 1 Tbsp chili powder
  • 1 Tbsp smoked paprika
  • 1 Tbsp cumin powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1/4 to 1/2 tsp red chili flakes
  • 1 tsp salt
  • 1/2 tsp pepper 

For Steak Fajitas

  • 1.5 lbs flank or skirt steak, cut into thin strips
  • 1 onion, sliced into strips
  • 1/2 each of colored bell peppers (red, yellow, orange, green), cut into strips
  • 4-5 garlic, finely chopped
  • 1/4 cup olive oil
  • 1/3 cup lime juice
  • 1/4 cup cilantro, chopped
  • 1 Tbsp Worcestershire sauce
  • Salt & Pepper to taste

Instructions

  1. Mix all fajita seasoning ingredients in a bowl.
  2. Marinate steak with 2-3 Tbsp of fajita seasoning, lime juice, cilantro, garlic, Worcestershire sauce and olive oil and refrigerate for 2-8 hours.
  3. When ready to cook, heat 1 tablespoon of oil in skillet and sauté onion and bell peppers along with 1 tsp of fajita seasoning. Cook for 5-6 minutes till they get soft yet retain the crunch. Remove to plate.
  4. Heat 2 tbsp oil or butter in the same skillet and stir in marinated steak strips.
  5. Keep on stirring on high flame to give it a quick sear. You can stir in 1 Tbsp of fajita seasoning for extra flavors. Cook for 2-3 minutes for medium rare.
  6. Arrange the fajitas along with peppers and optional toppings in skillet or platter and serve.

  • 5 lb pork butt roast
  • 6-7 chipotle peppers in adobo sauce
  • 1 large onion, chopped
  • 10-11 cloves, ground

  5. Shred pork with forks and mix well with sauce.

  • 2 cups cooked rice
  • 2 tablespoons fresh cilantro, chopped
  • 2 limes, juiced
  • 1/2 medium onion, diced
  • 3 to 4 cloves garlic, minced
  • 2 tablespoons vegetable oil (or olive oil)
  • 1 (15-ounce) can black beans (or pinto beans), drained
  • 1 tablespoon chili powder
  • 1/2 teaspoon ground cumin
  • 1 tablespoon hot sauce, or to taste
  • Pinch salt, to taste, optional
  • 4 (10-inch) large tortillas

Directions

  1. In a large microwave-safe bowl, toss together cooked rice and fresh chopped cilantro, and drizzle with the lime juice. Heat in the microwave or on the stove just until hot, and give it a quick stir.
  2. In a separate large skillet, sauté the onion in vegetable oil or olive oil for 5 minutes, or until the onion is soft. Add the garlic and cook another minute.
  3. Reduce the heat to medium-low, add the black beans or pinto beans, and season with the chili powder, cumin, and hot sauce, stirring to combine. You can add a bit of salt if you’d like, but you shouldn’t need too much with all the other seasonings. Allow the beans to cook until heated through, about 5 minutes.
  4. Spoon the cilantro-lime rice and the black bean mixture onto lightly warmed flour tortillas, and add any additional toppings you want.
  5. Wrap the burritos: Fold the short ends in, then fold one long side over the filling and gently push to ensure the fold is tight before rolling up the remainder of the burrito.
  6. Cut in half, and serve immediately.
