Coconut Raw Fish Recipe

Ingredients

  • 200g fresh raw fish, cut into cubes
  • Zest and juice of 1 lemon
  • Juice of 1 lime
  • ¼ tsp salt
  • ½ cup coconut cream
  • ¼ cup chopped dill
  • 1 Tbsp dill leaves to garnish
  • Salt, pepper, white bread and lettuce to serve

Directions

  1. Into a glass bowl, place the fish. Stir through the lemon, lime and salt. Cover and place into the fridge overnight to allow the fish to cook.
  2. Drain the excess juice. Fold through the coconut cream and dill. Season with salt and pepper.
  3. Serve with lettuce and bread.

Lamb And Potato Sliders Recipe

Ingredients

  • 3 lamb steaks
  • 3 cups cooked new potatoes
  • ½ cup mayonnaise
  • 2 Tbsp horseradish cream
  • 2 Tbsp chopped fresh tarragon
  • Salt and pepper
  • 1 avocado, smashed
  • 2 Tbsp lemon juice
  • 10 slider buns

Directions

  1. Preheat a barbecue grill to a medium heat. Rub the lamb with a little oil, season and cook until done to your liking. Set aside.null
  2. Chop the potatoes into small pieces. Place in a bowl with the mayonnaise, horseradish, tarragon and season to taste.
  3. Add the lemon juice to the avocado.
  4. Warm through the buns, spread a dollop of avocado, a couple of slices of lamb and potato salad and serve.

New Zealand Lolly Cake Recipe

Ingredients

  • 250g packet malt biscuits
  • 170g eskimo lollies, cut into quarters
  • 120g butter
  • ½ tin condensed milk
  • 50g chocolate chips
  • ½ cup coconut

Directions

  1. In a kitchen processor place the biscuits and blitz until they resemble fine breadcrumbs, or place in a plastic bag and crush with a rolling pin. Place in a large bowl with the eskimos.
  2. Melt the butter, condensed milk and chocolate in a microwave or small pot. Add to the biscuits and mix thoroughly.
  3. On a piece of baking paper roll into a log about 25cm. Roll in the coconut. Wrap in the paper and place in the fridge for 3-4 hours.
  4. Remove and cut into slices.
